Smoked Garlic & Herb Whole Chicken

The herb chicken was a culinary triumph, infused with fragrant spices and succulence. Paired with crispy potato wedges, it was a symphony of flavors and textures. Ingredients
  

  • 1 whole chicken about 4-5 pounds
  • 1/2 cup lemon juice
  • 3 tbsp olive oil
  • 3 tbsp dried sage
  • 3 tbsp dried rosemary
  • 3 tbsp dried thyme
  • 2 tbsp ginger paste
  • 2 tbsp garlic paste
  • 2 tbsp your favorite BBQ rub
  • Salt and pepper to taste

Instructions
 

  • In a bowl, combine lemon juice, olive oil, dried sage, rosemary, thyme, ginger paste, garlic paste, and your favorite BBQ rub. Mix well.
  • Rinse the whole chicken and pat it dry with paper towels.
  • Place the chicken in a large resealable plastic bag or a deep dish.
  • Pour the marinade over the chicken, ensuring it’s evenly coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, or ideally overnight, to let the flavors infuse.
  • – Preheat your smoker to 350°F using your choice of wood chips or chunks (like applewood or hickory) for a smoky flavor.
  • Remove the chicken from the refrigerator and let it come to room temperature for about 30 minutes.
  • Sprinkle the chicken with salt and pepper, both inside and out.
  • Place the chicken on the smoker grate, breast side up. Close the lid.
  • Smoke the chicken for about 2.5 hours or until the internal temperature in the thickest part of the thigh reaches 165°F (74°C).
  • Once cooked, carefully remove the chicken from the smoker and let it rest for about 10-15 minutes before carving.
  • Carve the smoked garlic & herb whole chicken and serve it with your favorite sides.
