Pork Belly| Korean Inspired

I have seen this recipe go viral on social media I had to create my own. Now, nothing fancy here, and I am not reinventing the wheel, I am going to keep it simple, if you have ever done pork belly burnt ends, this is no different. The difference between this recipe and pork belly burnt ends is this is cut into bigger pieces think of it like bacon on a stick.

Secret to this recipe is the bbq butter bath and the seasonings which I created and I will share with you below. We have to give it that Korean/Asian flavour.

BBQ butter bath “Asian inspired”

1 cup Bbq sauce  

1 tbsp Sesame oil 

1/2 tbsp Guchojan 

2 tbsp soy sauce 

you can add 1/2 cup of honey but I optioned without as I didn’t want it too sweet keeping in my bbq sauces tend to be mostly sweet.

Korean Inspired Pork Belly on Stick

Ingredients
  

  • 3-5 Lbs pork belly skinless

Korean bbq sauce

  • 1 Cup bbq sauce
  • 1 Tbsp sesame oil
  • 1/2 Tbsp Guchojan or any hot sauce you like
  • 2 Tbsp soy sauce

bbq rub

  • 1 Tbsp kosher salt, black pepper, garlic powder & Chinese 5 spice tbsp of each or use your favourite bbq rub

Instructions
 

  • i am using skinless pork bellies, cut length wise then in half as shown in video
  • place pork belly on a skewer and season heavily with your favourite bbq rub
  • set your smoker at 250 degrees and place your pork bellies in the smoker for 2 hours or until internal temp hits 165-170 degrees. I rotated the bellies around every half an hour to avoid the meat drying out.
  • Remove bellies from the smoker and in a tinfoil sheet add your bbq butter bath and place the tinfoil back on to the smoker for 1 hour. Rotate the meat 30 minutes in if required to make sure that the meat is coated well
  • Now remove the bellies from the tinfoil pan and place back on the smoker for 10-20 minutes to finish & create an amazing glaze shown in my picture
  • remove from smoker and garnish with green onions and sesame seeds
  • Those turned out sweet, sticky and tender. You can eat those as an appetizer or serve over rice, or in tacos.
