Dr Pepper Pork Candy | Pork Belly Burnt Ends

You probably heard people mention pork candy, and went "HUH". Well let me tell you what, this is what you call pork belly burnt ends… a combination of fatty pork, smoked until a nice bark forms, then give it a nice bbq sauce, butter & honey bath until it falls apart.

You have probably heard the term, don't fix what's not broken, well this recipe has been around for ages, and I just did the basic method, of cubing this delicious meat, apply a rub, smoke for a few hours then a bbq sauce/butter bath until it falls apart.
This is a delicacy in the BBQ world, make. For this recipe cut the pork belly into 1-1½ squares. Remember that pork belly is about 50/50 meat to fat ratio so you will lose a lot of the weight during the cook.

Ingredients
  

  • 5-6 lb Pork Belly Skin removed
  • 2 L Dr pepper (optional) brine
  • 7-8 tbsp Traeger BBQ honey apple Seasonings / lawry’s salt seasoning You can use your favourite bbq seasoning

BBQ Sauce/Butter bath

  • 1 stick Unsalted Butter cubed
  • 1/4 cup Dr Pepper
  • 1 cup BBQ Sauce You can use your favourite bbq sauce

Instructions
 

  • Cube the pork belly into 1-1½ inch cubes and brine in Dr Pepper for minimum 4 hours to overnight
  • Prepare your smoker for indirect cooking at 250-275°
  • Remove from fridge, dry pork belly & season with Traeger BBQ honey apple Seasonings / lawry’s salt seasoning
  • arrange cubes fat side down on your smoker grate.
  • OPTIONAL you can also spritz (dr pepper or apple cider vinegar) every 30-40 minutes which will help with the bark build up and keeps the meat moist).
  • Smoke Pork belly for 2-2.5 hours
  • place your pork belly in an aluminium pan and cover with bbq butter bath
  • Return to smoker uncovered for another 1-1.5 hours until pieces are tender.
  • Those turned out sweet, sticky and tender. You can eat those as an appetizer or serve over rice, or in tacos.
