Cube the pork belly into 1-1½ inch cubes and brine in Dr Pepper for minimum 4 hours to overnight
Prepare your smoker for indirect cooking at 250-275°
Remove from fridge, dry pork belly & season with Traeger BBQ honey apple Seasonings / lawry’s salt seasoning
arrange cubes fat side down on your smoker grate.
OPTIONAL you can also spritz (dr pepper or apple cider vinegar) every 30-40 minutes which will help with the bark build up and keeps the meat moist).
Smoke Pork belly for 2-2.5 hours
place your pork belly in an aluminium pan and cover with bbq butter bath
Return to smoker uncovered for another 1-1.5 hours until pieces are tender.
Those turned out sweet, sticky and tender. You can eat those as an appetizer or serve over rice, or in tacos.
