1.5Cupbbq sauce use your favorite bbq sauce if you like spicy pick a spicy bbq flavour for heat
bbq rub (or use store bought bbq rubs or seasoning
1/2Tbsp of each garlic powder, pepper, paprika
1/4 Tbsp of each Kosher salt & onion powder & cayenne pepper if you don’t want spicy remove cayenne pepper
Instructions
Prepare your smoker or grill for indirect cooking at 250-275°
Cube the pork belly into 1-1½ inch cubes
lightly dust the pork cubes with your favourite bbq rub or use the bbq rub provided in ingredients
arrange pork cubes on your smoker grate. And cook for about 1.5 hours until they hit about 135 degrees internal temp.
Remove pork belly from smoker/grill & place your pork belly in an aluminium pan and cover with your spicy bbq sauce and cover with tinfoil Return to smoker covered for another 30 mins.
remove from smoker/grill let it cook for 10-15 minutes then wrap with bacon (secure with tooth pick) then return back on smoker for another 35-45 minutes until bacon is cooked and crispy
remove from smoker/grill & enjoy as an appetizer or main course!
