Meatkingz Shotgun Shells with Ranch Alabama White Sauce

These Meatkingz Shotgun Shells are pure BBQ royalty jumbo pasta shells stuffed with a rich blend of ground beef, pork, shredded cheese, and Meatkingz seasoning, then wrapped in bacon, smoked low and hot, glazed in BBQ sauce, and finished with a creamy Ranch Alabama White Sauce. Crispy bacon, juicy filling, melty cheese, and smoky BBQ flavor in every bite.
Perfect for backyard parties, tailgates, game days, or showing off on the smoker.
INGREDIENTS
For the Shotgun Shells
- 1 box jumbo pasta shells
- 1 lb ground pork
- 1 lb ground beef
- 2 cups shredded cheese blend (cheddar & mozzarella work great)
- 2–3 tablespoons Meatkingz Honey Throne
- 1 package bacon
- Extra Meatkingz Honey Throne for seasoning
- 1 cup Meatkingz Texas-Style BBQ Sauce (or favorite BBQ sauce)
For the Ranch Alabama White Sauce
- ½ cup mayonnaise
- ½ cup ranch dressing
- 2 tablespoons apple cider vinegar
- 1 tablespoon lemon juice
- 1 teaspoon Worcestershire sauce
- 1 to 1½ tablespoons Meatkingz honey throne
COOKING INSTRUCTIONS
1. Prepare the Pasta ShellsCook the jumbo pasta shells until slightly softened but still firm enough to hold their shape. Drain and let cool completely. |
2. Make the FillingIn a large bowl combine:
Mix thoroughly until evenly combined. |
3. Stuff the ShellsCarefully pack each pasta shell full of the meat and cheese mixture. Wrap each stuffed shell tightly with bacon. Season the outside generously with additional Meatkingz Royal Dust. |
4. Smoke the Shotgun ShellsPreheat smoker to 300°F. Place the shotgun shells directly on the smoker grates or on a wire rack. Smoke until the internal temperature reaches around: 150^\circ\mathrm{F} At this stage, brush all sides generously with BBQ sauce. Continue cooking for another 20 minutes, or until:

Ranch Alabama White Sauce
To make this delicious Alabama-style white sauce with a ranch twist, mix together:
- ½ cup mayonnaise
- ½ cup ranch dressing
- 2 tablespoons apple cider vinegar
- 1 tablespoon lemon juice
- 1 teaspoon Worcestershire sauce
- 1 to 1½ tablespoons Meatkingz Honey Throne
Whisk everything until smooth, then refrigerate for at least 30–60 minutes to let the flavors blend together before serving.
Drizzle over the shotgun shells or serve on the side for dipping.
Meatkingz Chef’s Tip
For even more flavor, assemble the shotgun shells the night before and refrigerate overnight. This helps soften the pasta slightly while allowing the seasoning and smoke flavors to penetrate deeper during the cook.
