One of my favourite meats to cook is chicken drums turned into chicken lollipops. Always tasty and a crowd pleaser

To turn regular chicken legs into lollipops you’ll need a sharp knife. Make a cut completely around the lower part of the leg just below the knuckle cutting through the skin and tendons. Push the meat down to the large end and pull the remaining skin and cartilage off the knuckle. There’s a tiny bone right against the leg that needs to be removed. Remove this bone with your fingers & trim away the tendons sticking out the top.

I created this recipe working with Full Boar BBQ award winning seasonings and rubs.

I used a combination of the Full Boar BBQ classic rub and the classic BBQ sauce.

turn chicken drum into lollipops (keeps chicken drum juicy and tender during the cook)
-I seasoned my chicken lollipops with fullboarbbq classic rub then wrapped with bacon and seasoned with more of that delicious classic rub.
-set grill or smoker at 300 degrees and cook for about 1-1.5 hours until internal temp is about 145 degrees
-mix your bbq sauce I am using 1.5 cup of fullboarbbq classic bbq sauce (sweet & savoury flavour with a hint of smoke) then added 1 tbsp of honey 2 tbsp of the classic bbq rub and 1 tbsp of fireball. Combine well, dip your lollipops in the bbq mix then return back to the grill until chicken hits an internal temp of 165-170 degrees.
