Delicious Summer Lentil Dip

Lentil Dip
Ingredients
- 2 Cans lentil
- 2 red peppers diced
- 2 green onions diced
- 1 Cup currant
Dip Dressing
- 3/4 Cup olive oil or vegetable oil
- 1/2 Cup red wine Vinegar
- 2 Tbsp Dijon mustard
- 1.5 Tbsp cinnamon
- 2 Tbsp yellow curry powder
- 1 Tbsp coriander
Instructions
- In a small bowl, combine oil, dijon mustard, coriander, red wine vinegar, cinnamon and curry powder. Whisk well.
- Add lentils, currants, onions and red pepper to the dressing and combine
- Cover and place in the fridge overnight to allow for the flavours to marinate.
- Serve with your favourite tortilla chips or crackers.
