Delicious Summer Lentil Dip

Lentil Dip

Course Appetizer

Ingredients
  

  • 2 Cans lentil
  • 2 red peppers diced
  • 2 green onions diced
  • 1 Cup currant

Dip Dressing

  • 3/4 Cup olive oil or vegetable oil
  • 1/2 Cup red wine Vinegar
  • 2 Tbsp Dijon mustard
  • 1.5 Tbsp cinnamon
  • 2 Tbsp yellow curry powder
  • 1 Tbsp coriander

Instructions
 

  • In a small bowl, combine oil, dijon mustard, coriander, red wine vinegar, cinnamon and curry powder. Whisk well.
  • Add lentils, currants, onions and red pepper to the dressing and combine
  • Cover and place in the fridge overnight to allow for the flavours to marinate.
  • Serve with your favourite tortilla chips or crackers.
  • Enjoy!
