red wine Vinegar

Dijon mustard

yellow curry powder

coriander
Instructions
In a small bowl, combine oil, dijon mustard, coriander, red wine vinegar, cinnamon and curry powder. Whisk well.
Add lentils, currants, onions and red pepper to the dressing and combine
Cover and place in the fridge overnight to allow for the flavours to marinate.
Serve with your favourite tortilla chips or crackers.
