Glazed Sweet Apricot Chicken Thighs
This recipe turned absolutely delicious. Super easy for any lunch or dinner and you can use it on any chicken parts: Brest, legs, wings or drums.
Sweet apricot glazed chicken thighs
Ingredients
- 8 chicken thigh skin, bone in
glaze
- 1/2 Cup apricot jam or preserve
- 1/4 Cup hoisin sauce
- 2 Tbsp lemon juice
rub
- 2 Tsp ginger powder or fresh ginger
- 1 1/2 tsp each of kosher salt & garlic powder
- 1 tsp ground cumin
- 1/2 tsp of each black pepper chilli pepper & ginger
Instructions
- Prepare grill/smoker for indirect heat and set at 350 degrees
- Combine the rub ingredient and season the chicken thighs
- In a small sauce pan combine all glaze ingredients and simmer until thickens 3-4 minutes
- Place chicken thighs on grill/smoker and cook for about 25-30 mins skin side down. When 25-30 minutes are up brush the top side with the glaze then flip and brush again and cook until internal temp 165-170 degrees internally. Brush the remaining glaze before remove them
