Sweet apricot glazed chicken thighs

Ingredients
  

  • 8 chicken thigh skin, bone in

glaze

  • 1/2 Cup apricot jam or preserve
  • 1/4 Cup hoisin sauce
  • 2 Tbsp lemon juice

rub

  • 2 Tsp ginger powder or fresh ginger
  • 1 1/2 tsp each of kosher salt & garlic powder
  • 1 tsp ground cumin
  • 1/2 tsp of each black pepper chilli pepper & ginger

Instructions
 

  • Prepare grill/smoker for indirect heat and set at 350 degrees
  • Combine the rub ingredient and season the chicken thighs
  • In a small sauce pan combine all glaze ingredients and simmer until thickens 3-4 minutes
  • Place chicken thighs on grill/smoker and cook for about 25-30 mins skin side down. When 25-30 minutes are up brush the top side with the glaze then flip and brush again and cook until internal temp 165-170 degrees internally. Brush the remaining glaze before remove them
  • Enjoy!
