Smoked spatchcock chicken

Ingredients
  

  • 1 chicken whole

Marinate

  • 1 Bottle Italian dressing
  • 3-4 Tbsp hot sauce
  • 1/2 Cup soy sauce
  • 1/4 Cup Worcestershire sauce

bbq rub

  • 1/2 Tbsp of each garlic powder, pepper & paprika
  • 1/4 Tbsp onion powder & kosher salt

Garlic sauce

  • 1 Cup mayo
  • 1 lemon juiced
  • 3-4 Cloves garlic minced

Instructions
 

  • Pat chicken dry, remove backbone and flatten chicken
  • In a large mixing bowl add 3-4 tbsps  of your favorite Hot Sauce, 1 bottle of Zesty Italian Dressing, ½ cup Soy Sauce, and 1/4 cup Worcestershire Sauce. 
  • Mix these ingredients and add the chicken to it. 
  • Place the chicken in the fridge and Let the chicken marinate for at least 3-4 hours but overnight won’t hurt.
  • Take the chicken out of the marinade, let the excess marinade drip off,
  • Season each side with a light dose of your favourite bbq rub I am using 1/2 tbsp of each garlic powder, pepper, paprika and 1/4 tbsp onion powder & kosher salt 
  • Set your smoker at 275 and cook for 1-2 hours and turn half way through.
  • for garlic sauce combine all ingredients and refrigerate to maximize flavour
  • enjoy with rice or on wraps
