This is a must try recipe. The chicken lollipop is a “frenched” chicken leg. The meat is cut loose from the small end and pushed down creating a “lollipop” look.To turn regular chicken legs into lollipops you'll need a sharp knife. Make a cut completely around the lower part of the leg just below the knuckle cutting through the skin and tendons. Push the meat down to the large end and pull the remaining skin and cartilage off the knuckle. There's a tiny bone right against the leg that needs to be removed. Remove this bone with your fingers & trim away the tendons sticking out the top.

Dust with your favourite bbq rub then wrap with bacon, then dust again with more bbq rub, add in a pan with 3 tbsp of butter
set your smoker at 300 degrees, I am using nomad grill (charcoal, with applewood smoke). I set my smoker for a 2 cooking zone hot and cool. I placed the pan in the cool zone and smoked for 2 hours
