Instructions
pat chicken wings and dust with the Cajun rub or your favourite bbq rub
Set your charcoal grill for indirect heat cooking (3 zone split heat) set up your charcoal grill with two hot zones and one cool zone, pour the ignited coals in two equal piles on opposite sides of the lower grill grate, with a large gap between them. Chicken wings will be cooked in the middle zone.
hold temp at 275-300 degrees and place chicken wings in the middle zone for about 1.5 to 2 hours turning halfway through
meanwhile combine the Spicy Cajun honey garlic sauce together.
after 1.5 hours remove wings pour sauce all over and place back over the hot cooking zone for about 3-4 minutes to caramlize the sauce without burning the chicken wings (no need to cover the grill when cooking for the last 3-4 minutes over direct heat as you are only caramelizing the sauce)
