The BEST Greek Chicken Kabobs
Green Chicken Kabobs
Super juicy, tender kabobs made with the best marinade ever! Olive oil, lemon juice, oregano,garlic, salt and pepper. SO GOOD!
Ingredients
- 1 Lb cubed chicken breast or boneless chicken thighs
- 1 red onions
- 1 rep pepper
Greek Chicken Marinade
- 1/2 Cup olive oil
- 1 lemon juiced (fresh)
- 3 Tsp dried oregano
- 6 garlic cloves minced or 2 tbsp garlic paste
- 1.5 Tsp kosher salt
- 1 Tsp black pepper
tzatziki sauce (optional) or buy prepared
- 1 Cup plain yogurt
- 2 cloves garlic minced
- 1 Tbsp olive oil
- 3 Tbsp lemon juice (fresh)
- 1 cucumber grated seedless
- 2 Tbsp fresh dill chopped
- salt & pepper to taste
Instructions
- combine Greek chicken marinade in a bowl combine the dried oregano, olive oil, lemon juice, garlic, salt and black pepper.
- cube chicken and mix well with marinade for best flavour marinate in fridge for minimum 30 minutes to 4 hours
- i like to separate my chicken from the vegetables I like to skewer separately as vegetables and chicken finish cooking at different times
- i am using a charcoal grill but you can use what ever method of cooking you like. Remember we cubed the chicken into small bite size pieces they cook fast, set your grill between 350-375 degrees and cook direct over heat rotating chicken every 2-3 minutes. They cook fast it took about 8-10 minutes until it hit 165-175 degrees internal temperature. For the vegetables about 415 minutes total cook time, I like my vegetable crunchy.
tzatziki sauce
- In a mixing bowl, combine the garlic, Greek-style yogurt, lemon juice and olive oil.
- Use a box grater to grate the cucumber and drain out the extra liquid.
- Season with some pepper & salt after adding the grated cucumber and fresh dill to the yogurt mixture.
- cover and refrigerate for 1 hour to over night to allow flavours to blend in
- Represent the chicken skewers with the warm flatbread, tzatziki sauce and enjoy!
