Smoked Garlic & Herb Whole Chicken

Ingredients
- 1 whole chicken about 4-5 pounds
- 1/2 cup lemon juice
- 3 tbsp olive oil
- 3 tbsp dried sage
- 3 tbsp dried rosemary
- 3 tbsp dried thyme
- 2 tbsp ginger paste
- 2 tbsp garlic paste
- 2 tbsp your favorite BBQ rub
- Salt and pepper to taste

- In a bowl, combine lemon juice, olive oil, dried sage, rosemary, thyme, ginger paste, garlic paste, and your favorite BBQ rub. Mix well.
- Rinse the whole chicken and pat it dry with paper towels.
- Place the chicken in a large resealable plastic bag or a deep dish.
- Pour the marinade over the chicken, ensuring it’s evenly coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, or ideally overnight, to let the flavors infuse.
