INGREDIENTS

  • 1 whole chicken about 4-5 pounds
  • 1/2 cup lemon juice
  • 3 tbsp olive oil
  • 3 tbsp dried sage
  • 3 tbsp dried rosemary
  • 3 tbsp dried thyme
  • 2 tbsp ginger paste
  • 2 tbsp garlic paste
  • 2 tbsp your favorite BBQ rub
  • Salt and pepper to taste

COOKING INSTRUCTIONS

  1. In a bowl, combine lemon juice, olive oil, dried sage, rosemary, thyme, ginger paste, garlic paste, and your favorite BBQ rub. Mix well.
  2. Rinse the whole chicken and pat it dry with paper towels.
  3. Place the chicken in a large resealable plastic bag or a deep dish.
  4. Pour the marinade over the chicken, ensuring it’s evenly coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, or ideally overnight, to let the flavors infuse.
  5. – Preheat your smoker to 350°F using your choice of wood chips or chunks (like applewood or hickory) for a smoky flavor.
  6. Remove the chicken from the refrigerator and let it come to room temperature for about 30 minutes.
  7. Sprinkle the chicken with salt and pepper, both inside and out.
  8. Place the chicken on the smoker grate, breast side up. Close the lid.
  9. Smoke the chicken for about 2.5 hours or until the internal temperature in the thickest part of the thigh reaches 165°F (74°C).
  10. Once cooked, carefully remove the chicken from the smoker and let it rest for about 10-15 minutes before carving.
  11. Carve the smoked garlic & herb whole chicken and serve it with your favorite sides.
