Prepare the Chicken Lollipops:
Trim the drumsticks by cutting around the bone at the thinner end to expose it, and push the meat down to form a “lollipop” shape.
Season the chicken generously with your BBQ rub.
Prepare the Pan:
Place the lollipops in a pan. Cube ½ stick (¼ cup) of butter and distribute it around the chicken. This keeps the meat juicy and adds flavor while smoking.
Smoke the Chicken:
Preheat your smoker to 350°F.
Smoke the chicken for about 45 minutes or until the internal temperature reaches 135-140°F.
Prepare the Hot Honey Baste:
Melt the remaining ½ stick of butter. Mix it with the honey and hot honey (or honey and hot sauce). Stir until smooth.
Baste and Finish:
Once the chicken reaches 135-140°F, generously baste the lollipops with the hot honey mixture.
Continue smoking until the internal temperature reaches 165°F (about 15-20 more minutes).
Rest and Serve:
Remove the lollipops from the smoker and let them rest for 5 minutes.
Serve with extra hot honey on the side for dipping, if desired.
