INGREDIENTS

  • ½ cup mayonnaise
  • 2 tbsp finely chopped shallots
  • 3 tbsp finely diced cucumber (thinly diced)
  • 1 clove garlic, minced
  • 3 tbsp lemon juice
  • ½ tsp Meatkingz Honey Throne rub
  • ½ tsp Meatkingz Texas Reign rub
  • 1 tsp honey (optional, enhances the salmon flavors)
  • 1–2 tsp finely chopped fresh dill

COOKING INSTRUCTIONS

  1. Prep the salmon 
    • Pat the salmon dry with paper towels.
    • Lightly brush olive oil over the salmon to help the rub stick.

     

  2. Season 
    • Sprinkle Honey Throne rub evenly over the salmon, pressing gently to adhere.
    • Drizzle real maple syrup over the top for that sweet glaze.
    • Lay lemon slices on top of the salmon for extra aroma.

     

  3. Prepare the smoker 
    • Preheat your smoker to 300°F .
    • Add your choice of wood chips (alder, apple, or cherry) to create a light, sweet smoke.

     

  4. Smoke the salmon 
    • Place salmon skin-side down on the smoker grate.
    • Smoke for 1.5–2 hours, until internal temperature reaches 135°F and the salmon flakes easily.
    • Optional: During the last 20 minutes, brush a little extra maple over the top for a caramelized finish.

     

  5. Rest and serve 
    • Let the salmon rest 5–10 minutes before serving.
    • Garnish with fresh dill and lemon wedges. OPTIONAL

    • In a bowl, combine all ingredients. Mix well and let it sit for at least 15 minutes to let the flavors come together.
