Smoked Garlic Butter Picanha with Chimichurri

Picanha is one of the most flavorful cuts of beef when treated right. This recipe keeps it simple and bold scored fat cap, seasoned with Meatkingz Texas Reign, slow-smoked to a perfect medium, then basted with smoked garlic tallow and finished with a fresh chimichurri. This is steakhouse quality BBQ done the Meatkingz way.
INGREDIENTS
Picanha
- 1 whole picanha roast (with fat cap)
- Meatkingz Texas Reign BBQ Rub
Garlic Tallow Baste
- ½ cup beef tallow or butter
- 4 garlic cloves, roughly chopped
- 1 tbsp Meatkingz Beef Dynasty
Chimichurri
- 2 cups fresh parsley, finely chopped
- 1 cup olive oil
- 4 tbsp red wine vinegar
- 6 garlic cloves, minced
- 1 tbsp Meatkingz Beef Dynasty
COOKING INSTRUCTIONS
1. Prepare the Picanha
- Score the fat cap in a crosshatch pattern, being careful not to cut into the meat.
- Season generously on all sides with Meatkingz Texas Reign, pressing it into the scored fat.
2. Set the Smoker
- Preheat your smoker to 275°F.
- Place the picanha fat-side up on the smoker grates.
3. Smoke the Picanha
- Smoke until the internal temperature reaches 145°F for medium.
- Total cook time was approximately 1 hour 15 minutes.
4. Prepare the Garlic Tallow
- In a small saucepan, melt the tallow or butter over low heat.
- Add the chopped garlic and 1 tbsp Beef Dynasty.
- Let gently simmer until fragrant—do not brown the garlic.
5. Baste
- Baste the picanha with the garlic tallow every 20 minutes during the smoke for maximum flavor and moisture.
6. Make the Chimichurri
- In a bowl, combine parsley, olive oil, red wine vinegar, minced garlic, and Beef Dynasty.
- Mix well and let sit while the beef finishes cooking.
7. Rest and Slice
- Remove the picanha from the smoker and rest for 10 minutes.
- Slice against the grain for tenderness.
8. Finish
- Top generously with chimichurri and serve immediately.
Meatkingz Chef’s Tip
Scoring the fat cap allows the Texas Reign to penetrate deeper while rendering the fat perfectly. Don’t rush the rest those 10 minutes lock in the juices.
