Sweet & Sticky Hot Wings
The secret to this recipe is to double fry the chicken wings. They turn out SUPER crispy. If you can master the double frying method you can then add your desired sauce to the chicken wings and they will turn out amazing. This recipe could also be applied to chicken thighs, chicken breast or chicken drums.
Ingredients
Marinade (Buttermilk Dip)
- 1.5 KG Chicken Wings Split chicken wings
- 3 tbsp Fresh Ginger Grated
- 6 Garlic Cloves minced
- 2 Cups Buttermilk
Dredge
- 200 grams Corn Starch
- 1 tbsp Garlic Powder
- ½ tbsp salt
Sticky, Sweet Hot sauce
- 6 tbsps Ketchup
- 3 tbsps Honey
- 2 tbsps Soy Sauce
- 2 tbsps Sriracha Sauce Add more for a kick or add cayenne pepper
- 2 tbsps Brown Sugar
- 4 Garlic Cloves minced
- 1 tbsps Fresh Ginger Crated
Instructions
- Pat chicken wings dry.
- Mix marinade ingredients together (Buttermilk Dip), add the chicken wings and marinate in the fridge (4 hours to overnight to maximize flavour).
- Mix the dredge ingredients together and coat the chicken wing, one chicken wing at a time making sure the chicken wing is well coated.
- preheat the oil at 325°. Add the chicken wings in the oil & avoid over crowding the fryer. Cook for about 8 minutes, remove the chicken wings from the fryer and increase the fryer temp to 375°, add chicken wings and cook for an additional 2 minutes. Remove and rest on a resting rack while making your sticky sweet hot sauce.
- In a saucepan over medium heat the Sticky, Sweet Hot sauce ingredients ketchup, sriracha sauce, garlic, ginger, brown sugar, soy sauce & honey. Simmer for about 5 minutes, until blended and heated through. pour sauce over the chicken wings and stir to coat.
